THE JOURNEY TO CULINARTY AT SCALE

From our Bistro to Breakthrough

MFL was founded by three cooks and a filmmaker, brought together by their obsession with deliciousness, commitment to sustainability, and love for real food. At their bistro, “Brut,” inspired by French and Northern Italian cooking, they served hearty, meat-centered dishes.

Frustrated by the lack of depth in meatless menu options, our co-founders set out to recreate that same richness using fermentation of plant-based, natural foods to unlock the depth of flavor found in meat. After almost two years of study, the team discovered the power of Solid-State Fermentation.

Real Food Flavor Revolution

We knew that capturing such complex flavors was only possible with the resources of a fine-dining restaurant. We wanted to change that. We set out on a mission to become the first Real Food Flavor (RFF) company to bring culinarity at scale.
